About us

Welcome to Hacienda Azul, a dream built on tradition, hard work, and the love of family. We are Erika Santa and Macario Rojas, and our journey in Colorado's restaurant industry began in 1996.

For more than 25 years, we have poured our hearts into understanding this business, learning the rhythms of the kitchen, and most importantly, learning what our community loves.

We have worked tirelessly in Mexican restaurants across the state, always holding onto one shared dream: to one day open a place of our own—a place where we could share the authentic recipes and warm hospitality that define our heritage.

That dream first became a reality when we opened our beloved restaurant and Mexican groceries in the beautiful town of Estes Park. Raising our family alongside our business, we put our hearts into every dish, creating a home away from home for both locals and visitors.

It was there that we built our foundation on family, flavor, and a genuine commitment to our customers. Now, we are filled with excitement and gratitude as we embark on our newest adventure: bringing Hacienda Azul Mexican Grill and Cantina to the wonderful community of Lasalle.

This new chapter is more than just a new location; it's an invitation. An invitation for you to experience the culmination of our life's work. For over 25 years, Ericka and Macario have been the backbone of Mexican cuisine in Colorado. Their journey, which began in 1996, is a testament to hard work, family, and an unwavering dream. From their first restaurant and grocery store in Estes Park to this new adventure in Lasalle, their hands-on leadership and deep commitment to authenticity are the foundation of everything we do. You’ll often find them greeting guests at the door, ensuring every detail is perfect, and sharing their love for traditional flavors.
